Mushrooming Satiety

The lowly mushroom often gets a bad rap.  That’s because some are poisonous for humans.

Yet some bad mushrooms don’t spoil the whole bunch.  There are plenty of healthful ones, too.  Some are the only unadulterated plant-based foods to contain significant amounts of vitamin D.  They can also provide antioxidants, selenium, potassium and B vitamins.

Importantly, mushrooms can serve as a satiating beef substitute in many a recipe.  Although “meat-based meals are higher in calories,” participants within a four-day study found themselves just as sated over time by mushroom-based meals.
