Raw veggies provide all sorts of nutrients. so it’s only natural that astronauts would want a renewable supply of them. NASA botany experts have been working on just that.
As a result, International Space Station residents have been enjoying fresh batches of mustard greens and dwarf pak choi. They’ve even been able to pollinate some plants with a “small paintbrush.” Next year’s plan is to add dwarf tomatoes to the mix.
Because nutrients deteriorate rather rapidly when far from Mother Earth, space vegetables have been carefully selected for their high Vitamins C and K content. This type of innovative agriculture bodes well for future travel to Mars.
