Layers of Goodness

If you’re searching for goodness, look no further than the lowly onion.  This humble veggie sparks many a tasty dish.  But its value goes far beyond such short-term delight.

Within those translucent layers lies a wealth of nutrition.  There are vitamins C and B6 - as well as potassium, flavonoids, antioxidants, organosulfur and flavonols.

Although red and yellow onions are especially packed with nutrients, these other genus allium choices are also beneficial: chives, garlic, shallots and leeks.
